What is best OS / board for HCR - Mobile Robot Platform

A group of elementary students and I are building a School robot based on the HCR - Mobile Robot Platform with Sensors and Microcontroller. We would like any advice or suggestions anyone has regarding any project of this type
We are thinking of using the LattePanda (2G/32GB) motherboard. Are there any other boards that are recommended.
The Robot will use Sonar and Lidar for obstacle avoidance.
We would like to use speech recognition and synthesis at a later time.
