I suspect it is some kind of interference from my board (which is ESP32 based, but otherwise rather complicated, as it involves a game racing wheel and a stationary bike, all with different electric setups). For now the pot outputs share the ground with the board; my question is: can I isolate the pot side completely from the board, so the ground is no longer shared or is it better to leave it this way and keep looking for the source of interference?
To isolate the pot side completely from the board, you can use opto-isolators or digital isolators. You can think about opto-isolators. These components allow you to transmit signals between two electrically isolated circuits without a direct electrical connection.
