DFROBOT pH schematic

Hello, I wanted to ask about this DFROBOT pH sensor schematic.Is adjusting this potentiometer comes with risks? If you adjust the gain to amplify (1+7.2k/1k), from my understandment, it will amplify the sensors output up to 8 times and when the pH outputs -0.4, the output of the amplifier could be as low as -3.2V. Which could damage my MCU, because the second amplifer adds a 2V offset, and with an offset like that the output to the MCU could be -1.2V, which could damage my MCU as it doesn't accept negative voltages.
