Analog Signal Isolator

Hi, I was just wondering how does the analog signal isolator work?
Why is there interference between the EC and pH probe when used in the same water, but if i use the isolator interference is suddenly gone?

If the interference is transmitted through the water, why does an isolator between the connections work?

I'm just trying to understand how it works, thanks for any help!
